Good question. I tend to be pragmatic and simply add references and case studies when I come across them. No doubt there is bias in the sources that I see. The exception is when I have need to target a particular set of literature by e.g.. region or discipline. Visits to HK and Singapore led me to search the literature and request case studies from SE Asia, which I then used in the sessions I ran and added to the resources on my website. The case studies identify the country of origin.
The collection of resources in SE Asia was used by two colleagues at UQ in a paper which has just been published.

We are reviewing representation when it comes to reading lists. I would like to check what colleagues are doing to diversify their reading lists and/or supporting teachers do that. And how that diversity is somehow highlighted.
Of course having variety in the type of resource matters. I have about 50/50 split of reading and audio-visual resources. I also have an even split of male/female authors. But I am more interested in the ethnic variety of the authors.
On my PGCert resource list, I added pictures of the authors, and of course it is mostly pale faces. I know that most colleagues I have spoken to have told me the same.
My question is:
Do you highlight non-Western resources? How?
Other related questions are:
How can we find and add more diverse resources? At times the name is an obvious give-away.
What if the name looks 'Western', but the author is a black academic? Or from another minority? Do you show that? How?
I would say that BAME academics based in Western countries are a good start, and probably easier to source. What about resources from the 'Global South'?
