Gayle,
Why not use Equation Editor in Word combined with an On-screen keyboard (see
recent contributions to dis-forum under the subject "Software enquiry").
This should give your student all the functionality they need without
providing them with any analytical help. Alternatively they could use a
speech system. We've had a couple of students this year using DragonDictate
with MathCAD and set up some specialist vocabularies for this purpose - the
same could be done for Equation Editor.
