To the best of my knowledge, if you are seeking mentors for students over 18
who are not vulnerable and you ask candidates whether they have convictions
they are entitled to say 'No' if they have spent convictions.
I would suggest that you should be telling the mentees and the mentors to
observe boundaries - arguably in this situation the risk is as likely to
arise from mentors who don't have relevant convictions as those who do (or
perhaps more so).
