Essentially yes - good record keeping.
On general principles each case should be decided on its merits. Provided you do that and ensure appropriately limited access to the metadata, and that what you keep as a record is minimised and appropriate, I would expect the norm to be that you keep some record of the request and deletion. It is no different, in principle, to keeping a record of normal file deletion under RM retention principles - keeping a record that you had a file and deleted it is not a breach of the "no longer than necessary" rule.
You have legitimate interest as a legal basis provided it is managed correctly.
Of course there may be exceptions - very sensitive information that you should never have had in the first place could require something more - especially if the nature of your business is such that even knowing or showing you had a record is detrimental to the subject.
