For the Windows ad-hoc network approach, I don't believe the computers need
to have an internet connection, but just have WiFi adaptors (which all
laptops have nowadays).
The ad-hoc network is a 'direct' connection between the two computers, and
doesn't use any other network infrastructure.
I haven't ever tried sharing the screens like this, but the description for
it does talk about sharing documents and presentations so sounds right.
