There is a brilliant little scanner that I rave about when I have the opportunity. It's called the Logitech PageScan Colour. It's really a sheet feed scanner but the main body comes off and, should the book needing scanning be flat enough, simply steadying it, it will motorise over the book, and if not flat enough then a piece of Perspex over the book will create an upside-down scanner.
It really is very good and the OCR package with it is superb.
Hope this is of some use.

Subject: Easy to use scanners
I have a student who requires a flatbed scanner, but due to her
disability finds it difficult to lift and hold up the lid.
This would not be such a problem if using a sheet feed scanner but as
most of her images are from books, magazines a flatbed is the only
option.
Any suggestions ??
