I presume you are also considering textHELP! which we sell and which gets
quite an airing on this forum. The prediction is designed to help with
dyslexia, specifically, so is perhaps not quite so key-stroke-minimising as
others might be. However, if you also make good use of its automatic
correction (eg type "cp" and it corrects automatically to "cerebral
palsy"), and its abbreviation facility, I think it would be hard to beat.
Other programs that I am aware of include MindReader (shareware for DOS
only), FinishLine (Shareware, Windows), and Instant Text Prediction from
http://www.twsolutions.com. The latter looks conceptually interesting in
that it works a bit differently from normal by allowing you to type any
relevant letters in order (a bit like automatic correction), rather than
the first letters. I haven't done any comparisons, particularly from the
point of view of mobility problems. It might be worth doing a web search to
see if anybody has.
Good luck

The above paragraphs have been added automatically using the abbreviation
facility of textHELP!, which also gives speech feedback, word by word spell
check, automatic correction, word prediction and lots more to practically
any Windows application!
