Thanks for asking this question, it's really important.
A friend of mine wrote a blog post trying to provide some "alternative"
answers for people who are trying to avoid the corporate tracking that
comes with the sorts of suggestions you know about already. Actually,
perhaps the most important thing is just to communicate so use whatever

Personally, I really like 'jitsi':

It works well on all platforms, including android and iPhone, is fairly
intuitive, and you can also phone in with a regular phone (of course,
you won't have the video then - but voice is actually more important). I
sat and walked through how to use it with my mother yesterday, and she's
going to use it with her group from the U3A who are now all dispersed
and isolated in their homes.
