I'm not certain anyone from your organisation has actually looked up that individual in question...
LinkedIn will tell you which individuals have looked at your profile if you do not have Private mode turned on - and if this was the case, the individual should let you know the name of the employee in question that looked at their profile.
However, if you have Private mode turned on, LinkedIn will tell you the number of times your profile appeared in search results, and the organisations these searchers were at.
This does not actually mean anyone at these organisations looked at your profile - it just means your name appeared in the search results when someone was searching.
Might be worth asking for evidence that has let them to believe you hold data on them?
