Your legal basis is very unlikely to have been consent - if so then they should have been able to opt out of TurnItIn which I assume is not an option (it isn't for us).
With the individual having graduated, your legal basis may have expired (or it may have not, depending on your practices), but at the same time you may have grounds for Legitimate Interests. For example, if you need to keep the assignments in case someone has cheated, or in case of complaints. You can perform a Legitimate Interests Assessment (the ICO template is good if a bit too "checklist-y" for my taste) to check. As with everything GDPR, it's all about the legitimate purpose.
