We use either tippex mice (and if necessary go over it with a Sharpie) or we use Post-It Labelling & Cover-up Tape (which you can peel off afterwards, so you can use it on original copies and remove it afterwards - saves on copying. Although we are mainly using Adobe Acrobat and doing it electronically now.

If I have to redact paper documents (which is now rare), I use 'Tippex mice', generically known as correction rollers. They roll a piece of white stuff across the text - you can't see anything when photocopying and it doesn’t soak through to the other side of the page so you can redact double-sided documents. Very easy!
