Is this student a JAWS user? If so, I'm guessing they're not already familiar with setting up tables for navigation with JAWS and may require some additional tuition.
If it helps, I had a Blind student studying GCSE Psycholgy who initially had similar difficulties in recording and retrieving data within Word tables. The issue arises if column headers are not 'read' through Jaws as the reader loses track of what column and row they are in. In order to overcome this within a word document, the following bookmarking should be set when creating the table (or subsequently edited).
Title Reading in a Microsoft Word Table
The best way to do this is to use a bookmark.
1. Position the cursor in the first cell of the table (top left) corner. This is usually the row which contains the column headings!
2. Press SHIFT and CTRL and F5 to display the Bookmarks dialog box.
3. Type the word 'Title' (without the apostrophies) in the Bookmark name edit box.
4. Press ALT and A to add the bookmark to the document. This will result in the dialog box closing and you being returned to Word.
That's it, test it out. You should find that when you move down a column in a table, the first cell in the row (row label) is read out. Also, when you move across a column, the top cell in the column (column heading) is read out.
Hope this helps. Excel is also fully accessible with JAWS so again you need to ensure correct set up.

I am just wondering if there are any institutions in the West Midlands or
other local areas, who have recently had a fully blind student or students
studying Psychology, who would be willing to share their experience with us.
the sorts of things I am interested in are:
how the student managed things like producing tables in their assignments
accessing and analysis data using SPSS
Accessing the content of power points if produced through Windows 2010
Accessing small sections of diagrams such as cells or small parts of the
brain
Accessing screen shots.
Any information you can give me would be much appreciated.
