I would certainly set a time extension period and also I have recommended
rest breaks additional to extra time. It all depends on the individual case.

Dear All,
We have had numerous queries from the exams office regarding rest
periods and how they are incorporated into exams. I wondered how other
institutions deal with rest periods during exams. Is the amount of time
for rest periods open-ended or is it capped at a certain amount? Do
needs assessors set the time of rest periods? Is this in additional to
extra time?
Any help or advice you can offer would be greatly appreciated.
