If it is possible you could summarise the statements.
We tend to forget that s7 only entitles the requestor to the information and
makes no requirement of us to provide actual documents.
I had a case where I was responding to a request and the file contained a
letter from another data controller along the lines of 'we haven't dealt
with Mr X's complaint as yet because Mrs Y has been in hospital and
therefore unable to respond, apologies for the delay'.
I simply summarised the letter as 'no response was received due to long term
staff sickness'.
Obviously this may not be appropriate or possible in this situation but it
is worth considering.
Hope this helps.

Subject: [data-protection] SAR advice
Dear All
A member of staff has made an SAR asking to see copies of statements made by
colleagues during the course of an internal HR investigation in which he has
been accused of bullying behaviour. If I anonymise the statements, some are
general enough not to identify the person who made a particular statement,
but others contain details of incidents that will clearly identify the
participant(s).
Can anyone give me guidance on how to handle this one, in particular if
they've been in a similar situation?
Regards
John
