I'm new to this list, so I don't know what is common knowledge here, but a

There is a company in the States, Berkeley Systems that had brilliant
'hands free' interface control stuff *years* ago on the Mac.. like
1985 or so... but I think they may have gone.
There is, however, a specialist company, Don Johnston Special Needs,
that do all sorts of bits for the disabled.
