Have you considered real time captioning using the 'LIBERATED LEARNING
PROJECT' voice recognition software. This is very new technology and is
still in the development/trial stage but your university might be able to
get involved and help trial it. The developers are in St Mary's University

There are a number of universities here in Australia trialling it as part of
a development phase and I believe also in the USA and Canada.
