There is a BSI CoP for Legal Admissibility and Evidential Weight of Information Stored electronically (PD008:1999) and Management of Optical disk (WORM) Systems for the Recording of Documents that may be required as Evidence (BS7768)
As I understand it, if an electronic image is produced in evidence, the organisation should be able to show that the image can be relied upon as being an authentic representation of the original. This means careful procedures which you appear to have already thought of!
