Sorry, I think I sent that incorrectly:
Kirsty,
For the history of ice cream, including the expression Hokey Pokey (a
little bit) see the London Canal Museum:

Subject: [GEM] Victorian Seaside
Hi,
We do a workshop on the Victorian seaside and have a board with a body
drawn on that people used to put their heads through and have their
photo taken - does anyone know if this has a specific name? A teacher
asked us and we can't find anyone who knows!
Also, a lot of children tell us about the 'okey pokey' man who sold ice
cream. The only reference I can find is from the South of England, does
anyone know if this term was also used in the North?
I'd appreciate any responses.
Thank you
