Dear Paula,
I suspect that John Beleth was referring to the fact that according to council statutes and canon law from 1130 onwards, participants in tournaments were considered excommunicated, and those who died from wounds sustained from participation in them were theoretically to be denied Christian burial. Sermonists and theologians often expressed this in terms of being buried like an animal or ass in the field, rather than in consecrated ground. I hope that this helps.
