I'm not an expert in any of the areas mentioned in your posting, so I
hesitated before making these comments. However, here goes.
Regarding the influence of the Crusades on warfare in Western Europe, there
is a great deal of older literature, with which I am sure you are familiar.
A recent work which might be useful is
David Nicolle, Medieval Warfare Source Book, Arms and Armour Press, c. 1995.
This author has written many works on arms and armour in the medieval and
early modern period. In particular, he is in the process of completing a
revised version of his magnum opus on Arms and Armour in the Crusading Era.
This is possibly outside your area of interest, but if you are interested
in the diffusion of eastern weapons and armour westwards, I can give your
further references. (My own interest in this area relates to the military
history of Central Asia.)
A very recent work on the crusades is
Christopher Tyerman, The invention of the Crusades, Toronto, University of
Toronto Press, 1998.
I haven't read this book, so I'm only going on the title.
Regarding the Black Death and the impact of the pestilence in the 1360s, an
excellent book on the subject is The Black Death in England, edited by W.
M. Ormrod and P.G. Lindley, Stamford,Paul Watkins, c1996.
The article in this volume on the impact of the Black Death religious art
explodes a number of older myths on the subject.
