First my standard disclaimer: Anyone who takes legal advice from a graphic designer is an idiot. Second: I know a fair amount about US copyright law and significantly less about non-US copyright law and almost nothing about Finnish copyright.
That said, much of art of the last thirty or so years is more akin to visual anthropology than it is to what most people believe art to be. Also, at least in the US, the degree of expression required to allow copyright is minimal.
In the US, if something is created by employees who are making something as part of their job, the employer is the legal author for copyright purposes. If employees of a design or technology firm (NOT freelancers) are doing the documentation, that firm holds the copyright and probably has no requirement to give credit to anyone for anything. (Making people feel respected for their work seems wise from a management standpoint, however.)
All in all, I'd say that Ken's advice to make agreements in advance and Klaus' advice to find out what all parties want and expect pretty much cover it.
