I've never tried this, but in principle -
Drop a few sachets of silica gel into a glass jar. Pop a card circle
on top of the desiccant (that's just aesthetics), then place small
pieces of apple, carrot, maybe even animal parts, on the card. Seal
the jar and leave for a few days. You should get nicely dried-up
specimens.
If you want instant desiccation on a demo, you're probably looking at
a special-purpose glass vessel connected to a vacuum pump. It should
be possible to quickly suck most of the water out of most materials at
room temperature if you drop the pressure close to zero.
