Dear Jen,
Some of the authors who contributed to this recently published book discuss butchery:
Serjeantson, D. & H. Rees (eds.), (2009). Food, Craft and Status in Medieval Winchester: the plant and animal remains from the suburbs and city defences. Winchester Excavations Volume 10, Winchester: Winchester Museums. The book is obtainable from Winchester Museums.
Also, this ancient paper may also be relevant:
Serjeantson, D., T. Waldron & S. McCracken, 1986. Veal and calfskin in eighteenth century Kingston. The London Archaeologist, 5(9), 227-32.
Best wishes

Hello All,
I am hoping some one can help me.
I am interested in finding some papers that discuss medieval and post-medieval butchery practices, specifically the more standardised butchery practices associated with the butchery trade, rather than more domestic arrangements.
Can anyone point me in the direction of any useful papers?
Many thanks
