The book that springs to mind for me is Monika Doll's "Haustierhaltung und Schlachtsitten des Mittelalters under der Neuzeit. Eine Synthese aus archäologischen, bildlichen und schriftlichen Quellen Mitteleuropas" (2003, Verlag Marie Leidorf GmbH. ISBN: 3-89646-350-0), which is a published version of her Ph.D. It deals with both medieval and post-medieval butchery practices, focussing on archaeology, texts and images from (mostly) Germany. There is a seven page summary in English, but to really get something out of the book you need to be able to read German.
There is also a chapter on butchery in David Landon's "Feeding colonial Boston: A zooarchaeological study (Historical Archaeology, Vol 30 No.1).

I am hoping some one can help me.
I am interested in finding some papers that discuss medieval and
post-medieval butchery practices, specifically the more standardised
butchery practices associated with the butchery trade, rather than more
domestic arrangements.
