I stuck this list up on Medieval-L in June:
A full list would be an incredibly long and painful list to compile, so
here are some basic pointers:

Europe, 500 BC to AD 700 (translated by John Hines) Oxford : Blackwell.

Hadley, D. M. and Richards, J. D. (eds.) 2000. Cultures in contact:
Scandinavian settlement in England in the ninth and tenth centuries.
Turnhout: Brepols.
Mortensen, P and Rasmussen, B. M. (eds.) 1991. Fra stamme til stat i
Danmark. Hovdingesamfund og Kongemagt. Højberg : Jysk Arkoeologisk

medeltid. Projektet Sveriges kristnande, publikationer 1, Uppsala.
Nilsson, B. (ed.) 1996. Kristnandet i Sverige: gamla källor och nya

Proceedings of the Viking Congress contain several good papers.
There will also be some good papers in the forthcoming: Carver, M. (ed.)
The cross goes north: processes of conversion in northern Europe, AD
300-1300. Boydell & Brewer.
(Viking site reports)
Bersu, G. and Wilson, D. M. 1966. Three Viking graves in the Isle of
Man. London: Society for Medieval Archaeology.
Gräslund, A-S. 1980/1. Birka IV. The burial customs: a study of the

Owen, O. A. 1999. Scar: a Viking boat burial on Sanday, Orkney. East

(Thematic)
Bailey, R. N. 1980. Viking Age sculpture in Northern England. Glasgow:
William Collins Sons & Co Ltd. (see also relevant entries in Corpus of
Anglo-Saxon stone sculpture)
Staecker, J. 1999. Rex regum et dominus dominorum. Die
wikingerzeitlichen Kreuz- und Kruzifixanhänger als Ausdruck der Mision
in Altdänemark und Schweden. Lund Studies in Medieval Archaeology 23.
Lund.
(Journals)
Norwegian Archaeological Review, Current Swedish Archaeology, Journal of
Danish Archaeology, Fornvannen, Acta Archaeologica (Copenhagen),
Medieval Archaeology, Tor, Offa-Bucher etc. For journal and volume
articles see the indices in Nordic Archaeological Abstracts (currently
available for 1974-1996).
Here is a brief selection:
Abrams, L. 1997. The conversion of the Scandinavians of Dublin.
Anglo-Norman Studies 20: 1-29.
Andersen, H. 1995. The graves of the Jellinge Dynasty. Acta
Archaeologica 66: 281-300.
Gräslund, A-S. 1986-7. Runstenar, bygd och gravar. Tor 21: 241-262.
Richards, J. D. Jecock, M. Richmond, I and Tuck, C. 1995. The Viking
barrow cemetery at Heath Wood, Ingleby, Derbyshire. Medieval Archaeology
39: 51-70. See also:
http://www.york.ac.uk/depts/arch/staff/sites/ingleby/menu.htm
Wilson, D. M. 1967. The Vikings' relationship with Christianity in
northern England. Journal of the British Archaeological Association 30:
37-46.
All of the above will also have their own bibliographies...
This is only a short list. Regional studies (i.e. Iceland, Orkney and
sub-regions such as Norrland, Cumbria) have their own hoard of journals,
dissertations and archives on the subject which do not always deal
exclusively with conversion period religion, but can refer to it in
minor reports of artefacts, church excavations, iconography etc.
Scandinavian archaeologists also closely tie their work with the
extensive corpus of runic and place-name studies. I am vaguely aware of
some work on Byzantine influence in Scandinavian material culture (with
respect to religion) and the Rus, but I can't cite any basic works at
present - perhaps trawling through the Scandinavian dissertation lists
and the Swedish Seminar Papers in Archaeology
(http://www.hgo.se/nordark/uppsats.htm#SSPA) would be useful. Finally
many general texts on Vikings have basic summaries of the relevant
material culture, for example, Roesdahl, E. 1982. Viking Age Denmark.
London: British Museum Publications and Richards. J. D. 2000. Viking Age
England. Stroud: Tempus.
Hope this helps and please excuse any typos!
