I teach a graduate course to nurses. It is a 3 sh course, so I have a bit more than 3 clock hours! I use Munro's Statistical Methods for Health Care Research. I focus on concepts rather than computation. I figure they will use the computer and never really have to compute most statistics by hand. We do compute a Chi square so they can understand the concept of deviation from the mean. I have had good success taking this tact. I also try to make it very down to earth and relevant to their practice.
