Dear Ellie,
Your topic sounds very intereresting. I am sure that you will have a
lot of fun with it. Tristram's attempts to explain the detail in St
Christopher paintings relies on more general works, so it would be
interesting to see what turns up in your studies.
Have you looked up the saint in the relevant volume of Manual of Writings in Middle
English? This sometimes gives good leads, although I cannot remember
how many sermon texts it includes. My favourite literary reference
to St Christopher is the Irish Satire (included in Sisam's book, I
believe), which asks the saint about the price of fish!
As you can see, I'm not much help on the sermon side of things. I
expect you have references to the basic literature on the wall
paintings (there were several catalogues published earlier this
century). However, if it would be any use, I'd be happy to send you
a list of materials, either on list or off, as you prefer.
Best Wishes with your research.
