Press and hold shift before you click to highlight the chart and then, still holding the shift key, go to "copy" in the excel menu – it will say "copy picture". You then you get a window with a choice of "as shown on screen" or as shown when printed". It'll paste into Illustrator or Corel with all symbols, lines etc as editable objects. This works on my mac, but I may not have the most recent software.
Found that out when a pal during her PhD found all her epsilons turning to teeny dinosaurs (wingdings font) if she just highlighted and copied without the shift button. It caused much swearing - and anxiety about how her external might feel about dinosaur-neodymium plots - before it got worked out.

I always use Save As... and then select pdf as the file format. You get to choose whether to save all the pages of the workbook or just one. Illustrator can open the resulting pdf fine.
In fact, this workflow on Mac Excel 2011 works better for me than in Windows, because it seems to keep each curve as a single path object, whereas exporting from Windows Excel seems to break line graphs into multiple segments which are hard to get hold of (e.g. to change the line colour or weight) in Illustrator.

I have always copied and pasted my Excel charts into Adobe Illustrator and never had a problem.
I just upgraded to Excel 2011 and Illustrator CS6 and now when I paste a chart into AI, the symbols are completely pixelated. The AI command "select -> same ..." isn't working for me either.
Has anyone run into this yet and figured out a solution? I have a mac. this might be a mac-specific issue. the workarounds posted on internet forums include saving the chart as a pdf. but this gives me a fixed image, not a vector graphic that i can edit.
any help is greatly appreciated.
