This is a known bug in Mac Excel 2011

My solution is to keep a copy of Excel 2008 to copy/paste charts to Illustrator.
I also recently tried the preview release of Office 2016 for Mac.

The issue appears to be partially resolved, but only if you remove any shading from the markers.
