I was not involved with the Isbister material except in dating some of the eagles (they post dated the burials). The samples were supplied by Alison Sheridan of the National Museum of Scotland so she might know of the assemblage's whereabouts.

I don't know the answers, but you could try:
Museum of Scotland in Edinburgh
Stromness Museum
Anna Ritchie (Knap of Howar)
Finbar McCormick (Isbister)

Subject: [ZOOARCH] orkney bone assemblages
I am trying to track down the location of animal bones from two sites in Orkney: Knap of Howar and the Isbister tomb (Tomb of the Eagles). I had been under the impression that they were housed at the Orkney Museum in Kirkwall, but the museum curator tells me they are not there. Does anyone know where these can be found?
