I recently posted a query about deer osteometrics and this publication was recommended, I suggest you get in touch with the author as he appears to have done essentially what you are proposing!

Subject: [ZOOARCH] faunal data on white tail deer
Dear all
I have just started PhD examining the dynamics of human-whitetail deer interactions through time.
To achieve this I am trying to synthesise available zooarchaeological data (presence/absence, frequency (relative to other mammals), skeletal representation, ageing, sexing and metrics) from any period or geographical region.
I am particularly interested in examining issues of size variation and, to this end, am keen to collate as many measurements as possible.
As part of my metrical study I would like to make the data available via the Deer Bone Database, which has the capacity to store metrics, skeletal representation and isotope data http://www.nottingham.ac.uk/zooarchaeology/deer_bone/search.php
I was wondering if anyone out there has data that they might be willing to make available via this site? If this is something you are interested in, I would happily input/upload the data for you. You will, of course, received full recognition for your contribution to the database (all data are linked to a reference).
All the best
Rick Cantryll-Stewart MSc
