Christopher,
These are details from the Communion of the Apostles, a Byzantine
subject which shows a central altar with the Apostles grouped to either
side, and Christ in the centre, sometimes represented twice, offering
the wine and bread. The angels each carry a flabellum which, originally
at least, was indeed intended to keep flies off the consecrated elements.
