Listeria Warning for Kale / Parcells Oxygen Soak
This is a big FYI. Yesterday a report
was issued about listeria being found
on some packaged cut kale. Kale is such
a wonderful fresh green, one of our
favorite vegetables, very rich in
phyto-chemicals and important nutrients.
Hopefully this will not deter people
from buying and eating kale.

If you buy yours in loose twist-tied
bunches, and unchopped, then this should
not be a problem. In any case, this is
just another good reason to do the
Parcells Oxygen Soak for all vegetables,
all the time. Information on soaking all
vegetables, all foods, is available
at the URL below:

Listeria is not a bacteria that anyone
should ignore. It can be deadly. Here is
more info about listeriosis:

This is why I like to cook our torn kale
greens in boiling water, thus killing
anything that could have survived the
Parcells Oxygen Soak. But still, it's
good to be aware of this recent warning.
My daughter recalls that in her
microbiology class listeriosis was one of
the diseases her instructor said was
"deadly" and said that consumers did not
get enough information about this disease.
She's the one who spotted this recent
warning about kale.
Check out the URLs referenced here, but
don't give up kale. It is so rich in
nutrients. Here is link to info on kale
and its nutritional value, ranked 85
(0 to 100 scale) for high nutritional
value:
