From Dutch cesspits with a whealth of waterlogged material, I also know
such remains which I would also consider mineralised. Patricia, in which
respect is it definitely different? Might the chemical elements involved
in the replacement process play a roll??

Dear Patricia,
Your remains look very similar to the calcium phosphate
mineralised material I had from a waterlogged Roman latrine at
Silchester, GB. I would suggest you consider whether your picture shows
Pisum sativum as well as Vicia faba.
