In case you understand German, there´s an early 80s documentary titled "Mama, Papa, Zombie" produced for public German television.
To my knowledge it´s never been officially released (only partially on a horror DVD), but you can watch it here:

It shows the German ratings board discussing a horror film as well a group of parents of school kids watching a Lucio Fulci film and discussing the emotional impact plus it has a variety of interviews, many with adolescents but also video shop owners.
Even to a neutral mind, it is unintentionally funny at times, but it´s done pioneer work. (Unfortunately, the US-docu "This film is not yet rated" doesn´t mention any horror films at all.)
