Daniel got there first with Harper's 'Forms and
Orders' which is about the best intro there is, with
lots of suggestions there for further reading.
Proctor & Wordsworth is a reasonable edition if you
can get hold of a copy! Like many editions of the
period, though, they don't consult any original
sources other than printed ones.
Depending on where you are, though, and your second
hand bookshop saturation, it might actually be cheaper
to buy a microfilm of the 1531 breviary (P & W's main)
from the British Library...

Note, though, that many Uni libraries have subscribed
to the UMI microfilm series covering early English
printed books, so you may have a local point of access
to more than you think...
The Sarum Processional is also in the above, apart
from the 1502 which is (rather expensively) only
available in facsimile from Severinus Press in
Hereford (UK). It's a very nice book though!
Maskell's "Ancient Liturgy" compares the Ordinary of
the Mass in columns for Sarum, York & Hereford; again,
he doesn't use anything like enough sources for sucha
comparison to be of value, but it's an interesting
read.
His "Monumenta" I've not looked at for many years, but
I remember it as an eclectic collection very easy to
get lost in, but hugely fascinating.
Frere's "The Use of Sarum" is a general good intro.
But start with Harper!
