I don't know of any systematic archaeological work on the subject but a
good historical source is:
Langdon, J. (1986). Horses, oxen and technological innovation: the use of
draught animals in English farming from 1066 to 1500. Cambridge, Cambridge
University Press.
I myself am researching osteological evidence for traction, but I have not
reached the conclusion stage yet.
