Hi Tom,
Have you looked at http://www.webaim.org/. Its got some interesting information and some really useful simulations of what different users see etc (http://www.webaim.org/simulations/)
Covers multimedia aswell as web-related accessibility.
Its more tutorial based though, than academically focused.

Subject: multimedia accessibility
Hello,
I'm am writing to ask for your help / guidance. My name is Tom Bradley
and I am web, design and publications manager for University College
Chester in the UK, I am also studying for an MSc in Interactive
Multimedia Systems. My experience developing websites for education
has taught me of the importance and value of producing accessible web
applications, and I am very interested in specialising in this area as my
career develops.
As a result, I have decided to focus my masters dissertation on research
into the development of accessible multimedia applications. I would like
to document the issues involved, then implement and test the solutions.
I am just starting this process now, and must first conduct a literature
review so that I can gain an insight into the research that has already
been completed. I know there is a great deal of information available
regarding how websites can be made accessible, but I am unable to
find anything that directly related to multimedia. I was hoping you would
be able to point me in the direction of published articles about
multimedia accessibility, or towards individuals that work in the field.
Many thanks,
Tom Bradley
