I usually read with interest many posts here. But I finally have a response!
Fr. Moore repeats his esplanation every year in promoting our "Pancake Supper"
after Shrove Tuesday Mass. In the middle ages the Church's rules on fasting
were much more strict - no meat at all the whole 40 days, or even meat
byproducts including mile and egss! So whatever was left in the larder had to
quickly prepared and eaten (even distributed among other folks) before Ash
Wednesday. The easiest way to do this was to mix everything, including
leftover grease, in a pan, hence pna-cakes. There were much different than we
do now-a-days, but we have regular pancakes with sides of fried breakfast link
sausage and fresh friut, in a festive atmosphere. Then we distribute ashes
the next day. And the Lenten Liturgy has a number of adjustments to it.
