Interesting. Who leap to mind are "Sts" Charlemagne and Roland, both of whom were associated with the Reconquista (thus retroactively at least "crusaders"). Whether or not they were officially sainted, their relics and shrines were popular in the MAges, especially on the roads that lead to Santiago de C. (think too of the Pamplona windows at Chartres).
