This may be an obvious source to go to, but have you looked up "rose" in
Mirella Levi D'Ancona's _Garden of the Renaissance_? As the rose is an
attribute of the Virgin Mary, D'Ancona would probably elaborate on why
this is so, and she often cites relevant patristic texts from the
Pat. Lat., etc. Just a thought...

an example of 'rosa munda' or 'rosa mundi' being applied as an epithet to
the Blessed Virgin?
