Apart from Harcourt's paper, suggested by Alan OUtram, an older source
that many later works utilise is:
Koudelka, F. 1885. Das verhaltnis der Ossa longa zur Skeletthohe bei den
Saugetieren. Verhandlungen des Naturforschenden Vereins Bruun 24,
127-153.
Although ancient, this source of conversion factors is used by some
quite recent studies, such as:
Spahn, N. 1986. Untersuchungen an Skelettresten von Hunden und Katzen
aus dem mittelalterlichen Schleswig Ausgrabung Schild 1971-1975.
Ausgrabungen in Schleswig Berichte und Studien 5.
Spahn's metrical analysis of the medieval dogs from Schleswig might be
helpful to you.
