I'm not clear what subject exactly you're looking for recommendations on.
Primary sources in English that I have found valuable as supplementary or
required material in History of Christian Thought (Patristic thru
REformation) include, in no particular order:
The Westminster "Library of Christian Classics" series volumes as follows:
Augustine, Earlier Writings
Augustine, Later Works
Christology of the Later Fathers
Early Latin Fathers (title not exact--contains Tertullian, Hilary etc.)
Aquinas on Nature and Grace
Scholastic Miscellaney
Spiritual and Anabaptist Writers
John Calvin, Institutes (2 vols, hardcover)
Zwingli and Bullinger
Augustine, Confessions (in two or three of your favorite translations)
Cyril Richardson, Early Christian Fathers (or some other translation of
roughly the same documents, such as the Penguin volume)
Ante-Nicene and Post-Nicene Fathers Series (available pretty cheap these
days, but also electronically)
Henry Bettenson, Early Church Fathers (not complete documents, but excerpts
arranged topically)
Paulist Press's "Classics of Western Spirituality" series volumes, especially:
Augustine
Athanasius, Life of Antony
Origen
Pseudo-Dionysius
Gregory of Nyssa's "Life of Moses"
Bernard of Clairvaux
Bonaventure
Meister Eckhart (2 vols)
Gertrude of Helfta
Cloud of Unknowing
Julian of Norwich
Francis and Clare, Complete Works
Early Dominicans
Guigo the Carthusian, Ladder for Monks
Carthusian Spirituality
Devotio Moderna
Catherine of Siena, Dialogue
Angela of Foligno, Selected Writings
Apocalyptic Spirituality
Theresa of Avila, selections
John of the Cross, selections
Ignatius Loyola
Martin Luther, Selections from His Writings (ed. Dillenberger)
Introduction to St. Thomas Aquinas (ed. A. C. Pegis)
Soldiers of Christ: Saints' LIves from Late Antiquity and the Early Middle
Ages (ed. Noble and Head)
Medieval Saints: A Reader (ed. M. Stouck)
Butler's Lives of the Saints (ed. Attwater and Thurston)
Eusebius, History of the Church (Penguin)
Medieval Heresies (coll. of sources, ed. Wakefield and Evans)
Sources of Early Christian Thought Series (Fortress Press), especially:
The Christological Controversy (ed. R. A. Norris)
Biblical Interpretation (ed. Wm. Rusch?)
The Trinitarian Controversy (ed. Wm. Rusch)
Thomas a Kempis, Imitation of Christ (Penguin)
J. Stevenson, A New Eusebius
idem, Creeds, Councils, and Controversies
Luther's Works (complete works, Concordia)--a big series, but a library
ought to have it
William of Ockham, Quaestiones Adlibitales (M. McC. Adams translation, Yale)
This list has in mind the basic range of sources one would want to have
available for students' research papers and your own course preparation.
It does not include materials in Jewish or Islamic thought, though
depending upon the nature and structure of the course, one might want to
have these as well.
The list is no doubt idiosyncratic and I'm sure I've missed many obvious
things. But it would provide a good basis for a library's collection of
sources in the history of theology in the patristic through reformation
periods. I hasten to add that it neglects philosophy, a quirk of the
course I teach. Nonetheless, I hope it helps.
