Baudrillart's _Dictionnaire d'histoire et géographie écclesiastique_ will have
a longish article on Coutance, i would bet.
it's quality will depend very much on who the author happens to be
--e.g., the one on Chartres is quite good, being the work of Canon Yves
Delaporte, a very remarkable local scholar.
like the Chartres volume, the Coutance one will date from the early
'50's, so the bibliography will be a bit dated, but there's a good chance that
the DHGE will give you a good start. Unfortunately the work is
still ongoing, and i don't think that they've reached the "M's" yet.
You might also try Cabrol-Leclercq's similar _Dictionnaire d'archéologie
chrétienne et de liturgie_, though Coutance might be a bit late for it.
