For my money one of the best encyclopedic background surveys is Sister
Prudence Allen's _The Concept of Woman: The Aristotelian Revolution, 750
B.C.-A.D. 1250_ (I told you it was encyclopedic) (Eeerdmans, 1985).
My own modest efforts in the form of conference papers may provide you some
useful bibliographic leads:
Julian of Norwich's "Christ as Mother" and Medieval Constructions of Gender

Julian of Norwich: Essentialist and Feminist?
