You are quite right; the phrase isn't present in all the early creeds.
I notice that the 'Old Roman Creed' doesn't have it (Bettenson,
'Documents of the Christian Church' p. 33); a Gallican Creed of the
Sixth Century does have it (Bettenson, p. 34; and a note on the same
page of Bettenson informs us that the complete 'Apostles' Creed' as we
know it, is found first in 'Dicta Abbatis Pirminii de singulis libris
canonicis scarapsus' c. 750 - not a very early document, actually.'
The book 'Eary Christian Creeds' has been mentioned; I too would start
there.
