Putting aside Christ and his mother and the probable ubiquitous presence of
Christopher, Catherine and Nicholas appear to have been the most
frequently venerated female and male figures respectively in English local
churches of this period, up to the Reformation. I could give you some
statistics, if you require information at that level, though these would be
restricted to the dioceses so far covered for the database and atlas of saints'
cults.
Jacqueline Jenkins (Calgary) and Katherine Lewis (York) have organised a series
of panels at this year's Leeds Congress, sponsored by the Hagiography Society.
Katherine is giving a paper on Catherine in late medieval wills, Sherry Reames
(Wisconsin) is speaking on Catherine's legend in English breviaries, and there
are a couple of papers on Catherine's role in intellectual life at this period.
