I would highly recommend Metacard (www.metacard.com) for
cross-platform work of this sort. It supports a wide array of audio
and video formats, and its scripting language allows you to build
customized apps which will track answers, score tests, analyze textual
input, etc. If there is a general trend, I'd say it is to deliver
content via CD-ROM or similar media, and deliver testing via web, at
least until the bandwidth gets better. Metacard will let you do that.
What's especially nice is that you don't need to recompile your
projects to make them cross-platform.
Our Spanish for Business Professionals site
(http://www.dt.uh.edu/research/sbp/HOME.html) has info on a project
which was originally done in SuperCard and is currently undergoing a
port via MetaCard. Hope all that's helpful.
