In addition to the references which Nancy gave, you might have a look at Victor Turner if you haven't got him
already; there is plenty here on religion and particularly the Franciscans:
Turner, V. W., The Ritual Process: Structure and Anti-Structure (1969).
Also you migh find some work by Talal Asad helpful, for more references and an excellent discussion of
previous approaches (John Arnold brought these to my attention, and can no doubt help further):

What kinds of materials are you working on? Do you want to kick off a discussion in this area? My own work is in the
area of medieval festival culture, particularly in towns and practices/customs of a world upside-down type, and I
would be interested in discussing how practices like the feast of fools or the boy-bishop custom were accommodated
within a wider religious framework..
