What I found most helpful for central Italy were tithe lists. From
thirteenth- and fourteenth-century Italy, there are often surviving tithe
lists, organized by dioceses and their subregions, which assess tithes
church by church. From the 1930s on, the Biblioteca Apostolica Vaticana
sponsored the publication of a number of regional collections. You could
find out what "Rationes Decimarum Italiae" volumes are available by looking
at e-cats or at the studies on tithing.
